Moroccan Chicken Tagine

My version of Chicken Tagine is simple and flavorful. It may not be authentic to the core, but it is surely full of flavors and is absolutely delicious. You need a handful of spices and it tastes amazing.
Ingredients:
- Chicken Pieces - Boneless or With Bone
- Chopped Onions - 1 medium sized
- Chopped Garlic - 3-4 cloves
- Boiled Chickpeas with stalk - 1 cup
- Carrot - 1 nos
- Tomatoes- 1 nos
- Olives - 1/2 cup or more
- Coriander Leaves with Stalk - 1 small bunch
- Garlic Powder - 1 Tsp
- Coriander Cumin Powder - 1/2 Tsp
- Cinnamon Powder - 1/2 Tsp
- Sumac Powder - 1 Tsp
- Za’tar - 1 tsp
- Paprika Powder - 1/2 tsp
- Black Pepper - 1/2 tsp
- Olive Oil - 2 tbsp
- Salt - As per taste
Prep Required:
Boil the chickpeas before you start and reserve the leftover stalk. I prefer to use chicken thighs for the recipe. Soak your Tagine well before you start the cooking.
Method:
Take your Tagine and before you put it on heat, begin with mixing ingredients. Pour in Olive Oil and add onions, garlic and chicken pieces. Mix well. Now add the dry spices like sumac, coriander, za’atar, pepper, garlic powder, cinnamon powder and paprika. I prefer to add salt at the end. Give a good rub to chicken pieces and place on a slow heat on gas. Cover Tagine and let it cook.
Once the onions are softened and chicken starts to change colors add in the pieces of carrots, chickpeas, Olives and place the coriander leaves bunch in middle and cover and let it simmer for another 10-15 minutes. Keep stirring in between.
If you need, add a teaspoon of chickpea stalk to the dish. Once chicken is soft and cooked, add in chopped tomato slices. Cover and cook for another 5-10 minutes. And it’s done. Flavorful and Delicious Chicken Tagine, serve hot with Bread or Pita.
