Chicken Couscous Tagine Recipe:

- 1 whole chicken, cut into pieces
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon ground cinnamon
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup canned chickpeas, drained and rinsed
- 1 cup diced carrots
- 1 cup diced zucchini
- 1 cup diced bell peppers (any color)
- 1 cup cherry tomatoes
- 1 cup dried couscous
- Fresh cilantro or parsley for garnish
Instructions:
1. Heat the olive oil in a tagine pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
2. Add the chicken pieces to the pot and cook until browned on all sides, about 5 minutes per side.
3. Sprinkle the ground cumin, coriander, paprika, cinnamon, salt, and pepper over the chicken, stirring to coat evenly with the spices.
4. Pour the chicken broth into the tagine pot, then add the chickpeas, carrots, zucchini, bell peppers, and cherry tomatoes. Stir to combine.
5. Cover the tagine pot with its lid and simmer gently over low heat for 45-50 minutes, or until the chicken is cooked through and the vegetables are tender.
6. While the tagine is simmering, prepare the couscous according to the package instructions.
7. Serve the chicken and vegetable tagine over the cooked couscous, garnished with fresh cilantro or parsley.
