Summer Vegetable Tagine Recipe

Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper (red, yellow, or orange), chopped
- 1 zucchini, sliced
- 1 eggplant, cubed
- 2 tomatoes, chopped
- 1 cup carrots, sliced
- 1 cup peas, drained and rinsed
- 1 cup vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped (for garnish)

Instructions:
1. Prepare the Tagine Pot:
- Heat the olive oil in the base of the Tagine pot over medium heat.
2. Sauté Aromatics:
- Add the chopped onion and garlic to the pot. Sauté until the onion is soft and translucent, about 5 minutes.
3. Add Vegetables:
- Add the chopped bell pepper, zucchini, eggplant, tomatoes, and carrots to the pot. Stir to combine with the onions and garlic.
