Mango Kheer (Mango Rice Pudding)
Mango Kheer is a dessert made with mango, milk, and rice along with dry fruits and other ingredients to make a delicious dish. When cooked in a tagine, it preserves the nutrients and can easily be used as a serving dish as well on the dinner table.

Serves: 4 -6 servings
Ingredients:
1 mango
⅓ cup rice
1 liter milk
2-3 cardamom
Sugar (As per your Taste)
Kevda / Rose Water
Saffron
Dry fruits
Directions:
(Make sure your tagine has been cured before use.)
Cut and make a puree of 1 ripe mango.
Boil your rice with milk in the tagine under low flame. After 3 boils add cardamom and saffron threads.
Add mango puree, sugar, and mix well.
Cook on low flame and gently simmer for 60 minutes. The milk should not burn at the bottom of the tagine.
Stir continuously with a Rubber Spatula.
Kheer will cook down quite a bit at this time -- add kevda or rose water and cook for another 5-10 minutes.
Serve chilled and garnish with nuts upon serving.
